Sweet Corn Soup Recipe

Sweet Corn Soup Recipe

adapted from Alice Waters cookbook, "The Art of Simple Food". This is my favorite of all her cookbooks of which I have almost all of them. 

Ingredients:
4 tablespoons of butter
1 onion, diced
Sea salt

5 ears corn on the cob


Directions:

1. In a heavy bottom pot over medium heat melt the butter and add the onions.

2. Cook until soft, without browning, about 15 minutes, season with salt

3. While cooking cut the kernels from the cobs.

4. Add the kernels to the cooked onions and cook for 2 to 3 minutes

5. Cover with 1 quart water

6. Bring to a boil

7. Immediately lower the heat to a simmer and cook until the corn is just done about five minutes

8. Remove from the heat and purée in small batches in a blender. Be careful when blending hot soup. Be sure to allow the steam to escape.

9. Strain the soup through a medium mesh strainer to remove any tough skins.

Taste and salt to your taste.
