Spiced Peaches Recipe

Adapted from the cookbook Local Flavors by Deborah Madison. This is my favorite cookbook of all of hers, easy to navigate pictures and attainable.
What to do when you have too many peaches and they are getting a little bit too soft!
ingredients:
4 cups, sliced peaches, and or nectarines
1/2 cup sugar
2 cinnamon sticks
6 cloves
Seeds of 3 cardamom pods
1 tablespoon balsamic vinegar
12 pieces candied ginger, chopped
directions:
1. Peel the peaches and slice 1/2 inch thick.
2. Pour the peaches into a wide non-stick skillet.
3. Sprinkle on the sugar and add the remaining ingredients except the ginger.
4. Turn the heat to high until bubbling. Reduce heat to medium and cook. Stirring occasionally until the syrup is thick. About 15 to 20 minutes.
5. Add the ginger and stir in.
Store in a glass jar in the refrigerator, or eat immediately over ice cream.
