Spaghettini with Oil and Garlic Recipe

Ingredients:

1 pound pasta

1/3 cup olive oil

Four garlic cloves, chopped fine

Three parsley branches, stems removed, leaves, chopped

A pinch of hot pepper flakes

Sea salt


Directions:

1. Bring a large pot of water that as salty as the sea to boil and cook the spaghetti until al dente

2. In a heavy bottom pan over medium low heat add the olive oil

3. When the oil is just warm, add the garlic parsley and the pinch of pepper flakes

4. Cook until the garlic is soft, turning off the heat just as the garlic starts to sizzle. Do not let the garlic brown or burn.

5. Drain the pasta when cooked, reserve some of the cooking water.

6. Add the noodles to the sauce in the pan with a pinch of salt and toss.

7. Taste and season if necessary.

Add some of the cooking water if necessary to loosen the pasta eat immediately.

Additions:

cherry tomatoes halved

Parmigiano-Reggiano

Olives and or chopped anchovies
