Scalloped Potatoes with Ramps Recipe
Scalloped Potatoes with Wild Leeks (Ramps) RecipeRecipe adapted from About.com
ingredients:
6 cups sliced potatoes
3 cups ramps (wild leeks) - sliced
1 clove of hard-neck garlic - minced
sea salt
Freshly ground pepper to taste
1/2 cup chicken stock
3/4 cup heavy cream
1-1/2 cup good quality cheddar cheese - shredded
directions:
1. Saute garlic in cooking oil over medium heat until slightly golden -- do not burn.
2. Add ramps and saute for another 1-2 minutes.
3. Place a layer of sliced potatoes in a buttered 1-1/2 quart baking dish. Follow with a layer of sauteed ramps, and a sprinkling of sea salt and tellicherry pepper. Repeat layers, ending with a layer of potatoes.
4. Combine chicken stock and heavy cream. Pour mixture over potatoes and ramps.
5. Bake at 375-degrees for 45 minutes. Top with grated cheese. Return to oven for 15-20 more minutes, or until potatoes are tender.
serves 6-8
