2 cup flour
1 teaspoon baking powder
1/8 teaspoon salt (sea salt)
1/2 cup butter
1 cup sugar (super fine is great)
1/2 teaspoon lemon zest
1 egg
1 tablespoon lemon juice

My grandmother made these every Christmas and they are always a hit!
directions:
1. Combine flour, baking powder and salt - set aside
2. In a separate bowl, cream butter, sugar and lemon zest together. Then beat in the egg and lemon juice. This mix may look curdled.
3. Stir in flour mixture and mix until combined
4. Form the dough into 2-inch logs, and wrap in wax paper. Chill for 4 hours or overnight.
5. Cut into 3/16th-inch disks, and bake at 375 degrees for 8-10 minutes.
