Millet Crepes Recipe

Millet Crepes from Scratch

A great, slightly different alternative to traditional crepes. Lauren Feldman is, of course, a master crepe-maker. But with a little practice, we all got just a little bit better. She made this homemade crepes recipe with caramelized honey and apples last night in the Grains Workshop. So good!

ingredients
2 eggs
1 cup of milk
½ cup of water
½ teaspoon of salt
3 tablespoons ghee or melted butter
½ cup millet flour
½ cup white spelt flour (or other whole grain flour)

directions:
Put all ingredients into a blender and process for 15 seconds. Scrape down sides and process for another 15 seconds. Pour into a container and refrigerate for at least an hour, or overnight.
