


Fancy Almond Pound Cake Recipe
2/3 cup Mandelin Almond Paste


1 cup powdered sugar

1/2 cup egg yolks

1/4 cup whole eggs

1/2 teaspoon vanilla extract

3/4 cup egg whites

5-1/2 Tablespoons India Tree Caster Sugar

3/4 cup Caputo 00 Chefs Flour
1 tablespoon corn starch, sifted with flour

1/4 cup melted butter

1/4 pound slivered almonds
Almond Pound Cake Recipe
Simple to make, it is delightful to share. Using the best ingredients you can find, add up to a great cake.
Directions:
1. Mix the almond paste and confectioners sugar into a sand-like consistency.
2. Mix in the egg yolks, a little at a time.
3. Then add the whole egg and vanilla and almond.
4. Beat well until smooth and light.
5. Whip the egg whites to soft peaks.
6. Add the sugar and whip to stiff peaks.
7. Fold the meringue into the almond paste mixture.
8. Fold in the flour/starch mix and melted butter.
9. Butter the bottom and sides of two round or square bake pans. Line the insides of the pans with slivered almonds.
10. Divide batter between two cake pans.
11. Bake at 340-degrees (F), for 20-25 minutes, or until a toothpick comes out clean.
Makes 2 cakes
