Banana Bread Recipe

2 sticks butter 

1 cup caster sugar 

3 ripe bananas 

4 eggs 
----------- 
1 1/2 cup flour 

2 teaspoons baking powder 

1/2 teaspoon fine sea salt 

optional:

large handful of walnuts 


small handful of raisins

small handful of dried cranberries

Stand Mixer ideally or a hand mixer. Loaf pan buttered. 

Banana Bread Recipe

I make this recipe all the time. The combination of the igredients adds a lot of moisture, so baking times are a bit longer than you might expect. Banana Bread is a recipe that becomes your own as you make it.

I like to toast my slices and then slather them in butter.

instructions:

#1: With the flat beater mix (speed 6) the butter and sugar together. About 1 minute. Pre-heat oven to 350 F.

#2: Add eggs one at a time at a slower speed. Then beat for 30 seconds.

#3: Scrape the bowl and mix 1 1/2 minute.

#4: Sift dry ingredients together and then add 1/2 of the dry mixture to the bowl.

#5: Add 1/2 the banana. Mix for 30 seconds.

#6: Add the remaining Banana and dry ingredients. Mix for 30 seconds.

#7: Scrape the side of the bowl add nuts and stir 15 seconds.

#8: Transfer the mix to a lightly oiled loaf pan. Sprinkle cinnamon on top.

#9: Bake the bread for 60 to 75 minutes. Remove and cool on a rack when a tester comes out clean.
