Rayu is a Japanese chili oil, adapted from the Chinese la-yu tradition. Traditional rayu is mostly smooth oil with minimal solids — sesame oil infused with dried chili, sometimes garlic and ginger — and it functions more as a seasoning than a topping. 

Add a splash to add a kick to ramen, eggs, roasted veggies, and dumpling sauce. It also works well drizzled over noodles, tofu, or stir-fries.
