Roasted Chicken w/ Herbes de Provence Recipe

1 whole roasting chicken - about 4-1/2 pounds

4 tablespoons olive oil

2 tablespoons Herbes de Provence

1 teapoon sea salt

1 teapoon black pepper Roasted Chicken with Herbes de Provence Recipe
This is classic roasted chicken recipes -- but with a twist. The addition of Herbes de Provence. I recommend buying the best, free-range chicken you can find. The better the chicken, the better the final outcome.
Directions:

1. Pre-heat oven to 425 degrees F.
2. Mix sea salt, herbs and pepper in a small bowl. Rub chicken inside and out, with herb mixture.
3. Brush chicken with olive oil, and sprinkle remainder of herb mixture on chicken.
4. Tie legs together, and place chicken in a roasting pan and place, uncovered, in a heavy roasting pan and place in the oven.
5. Allow to roast approximately 1 hour and 15 minutes -- or until internal temperature reaches 177 degrees or the chicken's juices run clear when pierced in the thickest part of the thigh. Baste chicken from time to time with pan juices as the chicken roasts.
