Nancy's Yam Casserole Recipe

Lori has shared this recipe with me before and it is good! It is wicked easy, simple and tasty!

Lori loves to cook and a lot more organized than I am when it comes to recipes. And food is not just making a meal, it is about family, tradition, caring and sharing. 

 

Ingredients:

2 large yams

1/2 cup butter

1-1/2 cup sugar

3 large eggs

4 teaspoons flour

1/4 cup of milk or half and half 

1/2 teaspoon cinnamon - ground

1/2 teaspoon nutmeg - ground

1/2 teaspoon sea salt

 

directions:

1. Peel yams and cut into chunks, and steam until tender - about 20-30 minutes.

2. Mash cooked yams -  about 2 cups.

3. cream butter and sugar together until light and fluffy. 

4. Add milk and blend.

5. Stir in egg, flour, cinnamon, nutmeg and salt.

6. Transfer to a 1-1/2 quart casserole dish. 

7. Bake in pre-heated (350-degree) oven for 45 minutes (or until skewer inserted in the center comes out clean)
