Garlic Vinaigrette Recipe

Ingredients:

1  garlic clove

Sea salt

Freshly ground, Telicherry peppercorns

2 tablespoons aged red wine vinegar

1 teaspoon balsamic vinegar

6 to 8 tablespoons extra-virgin olive oil


Directions:

1. Peel and coarsely chop the garlic

2. Pound it in a mortar with a scant half teaspoon salt until purée smooth.

3. Stirring the vinegar, then whisk in the oil
