Garlic Purée Recipe

Ingredients:

2 heads of garlic - peeled and cut the cloves in half

3/4 cup chicken broth or water

1 1/2 tablespoons butter or olive oil

2 to 3 thyme sprigs

Sea salt


Directions:

1. Put everything in a small heavy sauce pan

2. Bring the liquid to a boil, reduced to a simmer, cover the pan, and cook until the garlic is very tender. About 10 to 15 minutes.

3. Check the pan and add more chicken broth or water if needed.

4. When the garlic is tender, drain, reserving the liquid.

5. Mash the garlic or pass it through a food mill.

6. Thin the purée with the reserved liquid.

Use the remaining liquid for other things.
