Fresh Mango Salsa Recipe
Fresh Mango Salsa RecipeBy far one of my favorite toppers to grilled or baked Halibut -- or better yet, Halibut Cheeks. Something about the tang of the mango with the buttery taste of fresh halibut - yum.
This recipe is adapted from "Ten" by Sheila Lukins (Workman, 2008)
Ingredients:
2 ripe mangoes - peeled, pitted and 1/4-inch diced
3 ripe tomatoes - seeded and 1/4-inch diced
1/4 cup red onion - 1/4 diced
2 teaspoons finely grated lime zest
juice of one lime
1 tablespoons extra-virgin olive oil
1/3 cup plus 2 tablespoons chopped fresh cilantro or fresh flat-leaf parsley leaves
sea salt and freshly ground black pepper to taste
Directions:
Combines all ingredients, except the 2 tablespoons of cilantro, in a bowl. Refrigerate, covered, for up to 4 hours. Just before serving, garnish with the remaining cilantro.
