Crispy Fried Capers Recipe

These crispy treats are a perfect garnish for salads and fish -- giving a salty crunch to your meal. The key to this recipe is using capers packed in salt, and rinsing and patting them dry before you fry them. 

Ingredients:

1/4 cup (2 jars) Salt-Packed Capers

1-1/2 cups Rice Bran Oil - for frying


Directions:

Rinse capers in a seive under running water for a minute or in a bowl of water for 10-20 minutes. Do multiple times if you want less salt.

Drain and rinse capers one more time, and pat very dry with a peper towel before frying -- or you will get serious splatter.

Heat oil in heavy skillet over moderate hear, until oil is about 375 degrees.  Fry capers in 2 batches until golden brown, about 30-45 seconds per batch.  Transfer with a slotted spoon to paper towels to drain.  Return oil to 375 degrees between batches.

Serve.
