Bigoli in Salsa Pasta with Anchovies and Onions Recipe
This classic recipe is simple, fast and easy. Capers, tuna are often added as well.
equipment:
frying pan large enough to hold the pasta, and a pot to boil the pasta in
ingredients:
250 grams (1/2 pound) of a straight shape pasta like spaghetti or Bigoli Nobili
Olive oil
1 onion - finely dice
100 grams (3.5 ounces) of anchovies chopped
50ml (1/4 cup) of white wine
parsley to finish
freshly ground tellicherry peppercorns
Instructions:
#1: Fill the pasta pot with enough water for a 1/2 pound of spaghetti and boil. Add the pasta and cook to al dente.
#2: In your fry pan heat a little olive oil until warm and has a nice shimmer.
#3: Add the onions and cook until soft and translucent
#4: Add the wine and a little splash of pasta water and reduce by 75% to the pan
#5: Add the anchovies, smoosh and stir until gone.
#6: Remove the spaghetti with tongs to the frying pan when al dente. Toss to coat and serve with pepper and parsley.
