Sweet Miso Marinated Salmon Recipe

Saikyo is the name of a special type of sweet miso originally from the western region in Japan. Because of its high sugar content, it’s used often for marinades, rather than for miso soup. Here, we use white miso by doubling the amount of mirin to compensate the sweetness. This marinade is just amazing with fatty fish, even with chicken or pork. Great for a dinner entrée and perfect for the bento box.
Prep and cooking time: 30 minutes, plus 1-day marinating time
4 pieces king or Atlantic salmon fillets (approximately 4-5 ounces per piece). Fatty fish works better for this recipe.
Salt as needed
Marinade:
8 ounces white miso
4 Tablespoons Ohsawa Organic Mirin
2 ½ Tablespoons sake
Grated daikon and soy sauce for garnish, if desired
Directions:
1. Sprinkle salt over both sides of the salmon fillets and leave them for 30 to 40 minutes. This process removes any unpleasant smell from the fish.
2. Rinse the fillets with water quickly and dry them with paper towel.
3. Place the fillets on a piece of paper towel and put another piece of paper towel on them. Close the ends.
Slide them into a zipper or plastic bag that can be sealed. Note: Alternately, you can wrap the salmon with cheesecloth or cotton cloth and use Tupperware instead of a plastic bag.
4. Mix the marinade ingredients until smooth, and put it into the bag on the salmon.
5. Refrigerate the salmon in the bag for 24 to 48 hours, depending on how salty you want the fish seasoned. I personally prefer a one-day marinade time.
6. Take the salmon wrapped in the paper towel out of the bag and remove the towel carefully.
7. Make sure that the fillets do not get the miso paste on them. If that happens, wipe off the paste with a clean paper towel.
8. Heat the oven to broil.
9. Place the salmon fillets on a lower rack in a roaster. If the salmon is darkening too quickly, cover with aluminum foil.
10. Broil the fillets for about 5 to 10 minutes, checking often to make sure they are not burned.
11. Turn the fillets over and continue to broil with the foil on for about 5 minutes.
12. Remove the foil and cook for another minute.
Serve warm or cold with grated daikon and soy sauce if desired.
