Herbs and spices are both plant-based seasonings used to enhance the flavor of food, but they come from different parts of the plant.

Herbs are typically the green, leafy parts of plants, such as basil, parsley, and cilantro, and are usually used fresh, although they can be dried as well.

Spices, on the other hand, come from other parts of the plant, like seeds, roots, bark, or fruit. Examples of spices include cinnamon (from bark), ginger (from root), and pepper (from seed). They are often used in dried form.
Their pairing in cooking can often bring a balance of freshness (from herbs) and depth or warmth (from spices).
