Every once in a while, an ingredient comes along that makes even deeply committed foodies ask:
Wait. They make it how?
Asin Tibuok is one of those ingredients.
At first glance, it hardly looks like salt. It looks more like an artifact unearthed from somewhere: a rounded white mass enclosed in a broken brown clay shell. Internationally, it has acquired the irresistible nickname “dinosaur egg salt.”
But the thing that looks so strange on the outside turns out to contain an even stranger—and much more beautiful—story.
Asin Tibuok is made on the Philippine island of Bohol through an elaborate traditional process involving seawater, coconut husks, ash, handmade filters, concentrated brine, clay pots, and fire. (Pretty interesting grocery list, right?) Production takes months. The knowledge passes through families. The salt itself emerges not as crystals, flakes, or granules, but as one dense, solid mass.
Its name tells you exactly what it is.
Asin means salt.
Tibuok means whole.
Whole salt.
And in 2025, this remarkable practice received international recognition of a more serious kind: UNESCO inscribed “The practice of making Asin Tibuok, the artisanal sea salt of the Boholano of Bohol Island, Philippines” on its List of Intangible Cultural Heritage in Need of Urgent Safeguarding.
So yes, this is a very cool salt.
But it is also something larger: a surviving piece of culinary technology, local ecology, craftsmanship, and cultural memory.
What Is Asin Tibuok?

Asin Tibuok is a traditional Boholano sea salt made by concentrating seawater through salt-soaked coconut husks, filtering seawater through the resulting ash, and boiling the concentrated brine in specialized clay pots until a solid mass of salt forms inside.
Unlike most salt sold today, the finished product is not ground into loose crystals. It remains a hard, roughly oval mass, traditionally sold with part of the clay vessel still surrounding it.
That explains both tibuok—“whole”—and the modern “dinosaur egg” nickname.
The traditional practice is associated today especially with Alburquerque, a coastal municipality in southern Bohol. In 2025, the Intellectual Property Office of the Philippines registered Alburquerque Asin Tibuok as a Philippine Geographical Indication, formally connecting the salt with six coastal barangays of the municipality: Bahi, San Agustin, West Poblacion, East Poblacion, Sta. Filomena, and Tagbuane.
But calling it merely “salt from Bohol” doesn't really explain what makes it extraordinary.
For that, we need coconut husks.
Why Are Coconut Husks Involved in Making Salt?
This may be our favorite part.
The coconut isn't added to Asin Tibuok as a flavoring. It is part of the technology for concentrating salt.
Salt makers—often referred to as mangasinay—begin with mature coconut husks. The husks are placed in coastal soaking pits called paril, where they remain exposed to seawater for months.
Over time, the fibrous husks absorb seawater and the salts dissolved within it.
The saturated husks are eventually removed, chopped, dried carefully, and burned. The result is a salt-rich hardened ash known as gasang.
This is where the process becomes fantastically ingenious (in case you didn't think it was already).
The coconut husks have effectively become a temporary reservoir for seawater minerals. Burning removes the organic material while leaving behind mineral-rich ash that can be used to concentrate another batch of seawater.
This isn't coconut-flavored salt. It's coconut husk as processing equipment.
Food technology doesn't necessarily require stainless steel and electricity. Sometimes it requires understanding exactly what a plant fiber, the tide, ash, and fire can do.
Gasang + Seawater = Tasik
Once the coconut husks have become gasang, the ash is packed into a large funnel-shaped filtering device traditionally made with bamboo and plant material. This filter is commonly called a sagsag.
Fresh seawater is poured through the ash.
As it passes through, the water dissolves salt concentrated in the gasang. What emerges from the bottom is no longer ordinary seawater. It is a much more concentrated brine known as tasik.
Historically, the tasik could be collected in hollowed coconut trunks positioned beneath the filters.
Think about what has happened so far.
We started with seawater.
We used coconut husks to absorb it.
We dried and burned the husks.
We poured more seawater through the ashes.
And only now do we have the concentrated brine that will eventually become salt.
This is an exercise in patience. Questions of "are we there yet" shall not be entertained here.
Then Come the Clay Pots
At this point, another craft enters the story: pottery.
The tasik is poured into small, specially made earthenware pots arranged over intense heat. As water evaporates, more brine is continually added.
Again.
And again.
And again.
The salt concentration rises. Crystals form. Eventually, the vessel fills with an increasingly solid mass of salt.
The clay pot is not simply packaging. It is part of the production process itself.
The official Philippine Geographical Indication record describes the local reddish-brown clay used in Asin Tibuok production as kun. It is particularly associated with areas of East Poblacion and Santa Filomena and is shaped into specialized vessels used for the salt.
As heating continues and salt solidifies inside, the pot can crack.
What remains is the object that has made Asin Tibuok visually famous: a hard oval of pale salt emerging from a shell of fired brown clay.

The “Dinosaur Egg” Isn't a Gimmick
From a modern retail perspective, an egg-shaped salt enclosed in broken pottery looks almost suspiciously designed for Instagram.
It wasn't.
The form is a consequence of the way the salt is made.
According to the official geographical-indication description, traditional Alburquerque Asin Tibuok can weigh roughly 1 to 1.3 kilograms (2.2 to 2.87 pounds), depending on the vessel. Its exterior may take on whitish, pink, or brown tones from contact with the clay, while its interior is lighter and more powdery.
The shape reflects the pot. The clay reflects the place.
And the solid mass reflects a world in which salt wasn't necessarily expected to arrive as thousands of identical little grains pouring neatly from a cardboard cylinder.
Asin Tibuok is salt before industrial convenience got involved.
A Very Old Idea for Making Salt
Exactly when this method began is difficult to pin down with the sort of documentary precision we might want today.
The Philippine geographical-indication record describes the tradition as dating back to pre-colonial times. And we do know that a remarkably similar method of ash-based salt making in the Visayas was recorded centuries ago.
In the 17th century, Jesuit chronicler Francisco Ignacio Alcina described a distinctive Visayan method of making salt that came to be referred to as sal de Bisayas—“salt of the Visayas.”
The historical method used plant material soaked in seawater, dried and burned to ash, then leached with seawater to produce concentrated brine that could be boiled down into salt.
Sound familiar?
Modern Asin Tibuok isn't necessarily identical in every detail to every historical Visayan salt described centuries ago. Traditions evolve, available materials change, and regional practices differ.
But the technological family resemblance is extraordinary.
We're looking at an idea about extracting salt from the sea that has survived through generations of practical knowledge rather than through an instruction manual.
Salt as Food, Currency, and Connection
It's easy for those of us with a drawer full of finishing salts to think of salt mainly as seasoning. And why yes, I do have a small vial in my purse just in case...
Historically, Asin Tibuok did considerably more work than that.
Boholano salt makers produced an object that could be stored, transported, traded, and used gradually. Coastal salt-making communities historically exchanged salt with agricultural communities inland, including trading salt for rice and other crops.
The salt was used to season foods such as rice porridge and traditional dishes, to cure fish and meat, and even as a mineral source for livestock. A solid mass made practical sense.
Instead of reaching into a salt cellar, a household could shave, scrape, grate, chip, or dissolve what was needed. Accounts also describe whole pieces being suspended and dipped directly into soups or porridge to season them.
The salt wasn't just something on the food. It participated in the economic relationship between the coast and the interior.
So Why Did Asin Tibuok Nearly Disappear?
Because making salt this way is magnificently inefficient by modern industrial standards.
And that is both the problem and the point.
Months of soaking. Drying that depends on weather. Days of tending fires. Gathering and burning coconut husks. Making filters. Producing clay pots. Repeatedly boiling concentrated brine.
Industrial salt can be made and distributed vastly more cheaply.
As younger generations pursued different livelihoods and rural communities changed, fewer people learned the process. UNESCO's 2025 safeguarding decision specifically identifies declining interest among younger generations, rural-to-urban migration, and environmental threats—particularly climate change—as risks to the continued viability of the tradition.
There was also a peculiarly modern problem for an ancient salt.
When Traditional Salt Met the Iodization Law
In 1995, the Philippines enacted Republic Act No. 8172, known as the ASIN Law, establishing nationwide salt iodization as a public-health measure against iodine-deficiency disorders.
The health objective was important. But mandatory iodization created difficulties for small artisanal salts whose identity depended on traditional production rather than industrial processing. Philippine heritage sources have identified the law as one of several forces that contributed to the decline of traditional salt production.
Then, nearly three decades later, the law changed.
The Philippine Salt Industry Development Act of 2024 formally recognized artisanal salt as a category of locally produced, unrefined sea salt made using traditional methods.
Crucially, the new law made iodization optional for artisanal salt and explicitly allowed artisanal salt to be used by food manufacturers and food establishments.
It's a surprisingly elegant turn in the story.
A national policy designed to solve one food problem eventually made room for the preservation of a very different kind of food knowledge.
What UNESCO Recognition Actually Means
In 2025, UNESCO inscribed the practice of making Asin Tibuok on the List of Intangible Cultural Heritage in Need of Urgent Safeguarding.
The wording matters.
UNESCO did not declare a particular salt egg the “best salt in the world,” certify a commercial product, or give Asin Tibuok the culinary equivalent of a gold medal.
UNESCO recognized the practice: the knowledge, skills, family participation, craftsmanship, and cultural relationships required to make the salt.
The “urgent safeguarding” part also matters.
This isn't simply a heritage honor bestowed on something safely preserved behind glass.
It's an acknowledgment that the living practice is vulnerable.
UNESCO's safeguarding plan focuses on community involvement, environmental protection, transferring knowledge to younger generations, and making the practice more economically sustainable.
In other words:
The goal isn't to preserve Asin Tibuok as a museum object.
The goal is to make it possible for people to keep making it.
And What Is a Geographical Indication?
The second major recognition arrived through the Philippines' own intellectual-property system.

In July 2025, the Intellectual Property Office of the Philippines registered Alburquerque Asin Tibuok as a Geographical Indication, or GI.
A geographical indication connects a product's identity or reputation with a particular place—think of the general principle behind names such as Parmigiano Reggiano, Champagne, or Darjeeling.
For Alburquerque Asin Tibuok, the registered geographical area includes six coastal barangays of Alburquerque, Bohol.
The GI documentation is fascinating because it makes explicit something the salt itself already tells us:
Place isn't merely where Asin Tibuok happens to be made. Place is one of its ingredients.
The seawater matters.
The tides matter.
The coastal environment matters.
The coconut husks matter.
The local clay matters.
The pottery tradition matters.
And the accumulated knowledge of the people who know what to do with all of them matters most of all.
A Vocabulary for Making Whole Salt
One of the pleasures of learning about a traditional food is discovering that an entire vocabulary exists around processes that outsiders initially describe with cumbersome paragraphs.
- Asin: Salt.
- Tibuok: Whole.
- Mangasinay: Salt maker.

What Does Asin Tibuok Taste Like?
After all that history, anthropology, pottery, and legislation, we eventually reach the important culinary question:
Does the salt actually taste good?
Very much so.
Asin Tibuok is first and foremost salt, but it doesn't have the flat, one-note salinity of highly refined table salt. The official geographical-indication description characterizes it as having a smoky, sweet quality with a coconut aroma blended with sea salt.
We'd describe the experience a little more cautiously as clean but complex salinity, with mineral character and a subtle smoky depth that makes sense once you know what the salt has been through.
And because you grate it directly from a solid mass, using it has an unavoidable bit of theater.
We are not opposed to theater at dinner.
How Do You Use Asin Tibuok?
The easiest modern approach is a Microplane or fine grater.
Shave a small amount directly over a finished dish, just as you might grate hard cheese or zest citrus.
Try it on:

- Shellfish
- Tomatoes

- Rice dishes
- Grilled meat
- Fresh fruit

Is Asin Tibuok Really One of the World's Rarest Salts?
“Rarest salt in the world” is the sort of phrase the internet loves and food writers should approach cautiously.
There is no international salt census ranking artisanal salts by rarity.
What we can say with confidence is more interesting anyway.
Asin Tibuok is made through an unusually labor-intensive process requiring specialized local knowledge, and the living tradition became sufficiently vulnerable that UNESCO placed it on the List of Intangible Cultural Heritage in Need of Urgent Safeguarding.
Production today is centered in a small part of Bohol, and Alburquerque has become the principal surviving home of the craft.
That's rare enough for us.

That's the vulnerable part.
The salt itself can sit on a shelf for a very long time.
The knowledge cannot.
Whole Salt, Whole Story
A coconut falls.
A tide comes in.
Husks soak for months.
Fire turns them to ash.
Seawater passes through the remains.
Brine collects.
Clay becomes a vessel.
More fire takes the water away.
And what is left is salt.
Not flakes.
Not crystals in a shaker.
One whole piece.
There are faster ways to make salt.
Almost every way is faster.
But efficiency isn't the only form of intelligence.
Asin Tibuok is the accumulated intelligence of people who learned how the sea, coconut, ash, clay, tides, and fire could be persuaded to work together—and then taught someone else.
That feels worthy of a little reverence.
And, naturally, a Microplane.
