Tomato Vinegar Salad Recipe

This is a classic recipe -- so easy and made so much better with tomato vinegar.

2 cucumbers - halved lengthwise, seeded and sliced 

3 large tomatoes, seeded and coarsely chopped 

2/3 cup coarsely chopped red onion 

1/3 cup tomato vinegar 

3 tablespoons EV olive oil 

1 tablespoon caster sugar 

1/2 cup chopped fresh mint leaves 

salt and pepper to taste 



Directions:
1. In a large bowl, toss together cucumbers, tomatoes, and onions.

2. In a smaller bowl or jar, stir together vinegar, olive oil, and sugar.

3. Pour dressing over cucumbers and tomatoes, and toss - coating completely

4. Add mint and season to taste with salt and pepper.

serves 4-6
