Squid Ink Linguine al Frutti di Mare (Fruits of the Sea) Recipe
So simple, and so good - if you can find the right seafood. This recipe includes just about all the shell fish and crustaceans you can find, but it is just as good with one or two of them.
ingredients:
Approximately 1 pound of high quality pasta or squid-ink pasta
1 cup white wine
20 fresh mussels
20 fresh clams
10 shrimp
10 scallops
10 calamari
1/2 tablespoon unsalted butter
1/2 tablespoon olive oil
1 can San Marzano Tomatoes
5 cloves of hard-neck garlic - minced
4-5 fresh basil leaves - sliced very thin
1 teaspoon hot pepper flakes
sea salt to taste
directions:
1. Bring pot of salted water to a boil and cook pasta for 10-12 minutes.
2. While pasta is cooking, heat butter and olive oil in a large pan over medium heat. Saute garlic and pepper flakes until cooked, but not browned. Add mussels and clams, and saute until opened. Add rest of seafood and cook for approximately one minutes longer. Deglaze with white wine. Add tomatoes and let reduce slightly.
3. Strain pasta and add to sauce. Toss well and sprinkled with basil, and add sat to taste.
served 5-6
