Garlic Allioli Recipe

Makes 1 cup - food processor

Ingredients:

1 small egg - the freshest you can find

1 cup EV Olive Oil

1 clove garlic, peeled

1 tsp Sanchez Romate Reserva Sherry Vinegar or fresh lemon juice

sea salt and ground pepper to taste


Directions:

1. Make sure oils and egg are at room temperature before you begin.

2. In a food processor, combine the egg, the garlic clove, 2 tbsp olive oil, and the vinegar or lemon juice, salt and pepper. 

3. Process until blended and the garlic is fully pureed.

4. With the motor running, add the remaining olive oil little by little.

5. If the mixture appears too thick when you begin adding the oil, add 1 tsp of water to loosen the sauce. 

6. Continue adding the oil and blending until you have a rich, creamy allioli. 

7. Add salt to taste. Use right away -- or store in refrigerator for up to 2 days.
