Tomato Salad with Tomato Vinegar Recipe

This is a classic recipe -- so easy and made so much better with Gegenbauer's tomato vinegar.

Ingredients:

 2 cucumbers - halved lengthwise, seeded and sliced

 3 large tomatoes, seeded and coarsely chopped

 2/3 cup coarsely chopped red onion

1/3 cup tomato vinegar

 3 tablespoons quality olive oil

1 tablespoon cane sugar

 1/2 cup chopped fresh mint leaves

salt and pepper to taste

Directions:

 1.In a large bowl, toss together cucumbers, tomatoes, and onions.

2.In a smaller bowl or jar, stir together vinegar, olive oil, and sugar.

3.Pour dressing over cucumbers and tomatoes, and toss - coating completely

4.Add mint and season to taste with salt and pepper.

serves 4-6
