Pernigotti Cocoa Powder - 2.2 lbs/1 kg

This dark, unsweetened cocoa powder is in a class unto itself. Pernigotti, the famed Italian chocolate maker, removes less fat from its cocoa (20-22% fat content), which results in a more intense and immediate chocolate flavor. This wonderful cocoa is Dutch processed and has a touch of ground vanilla bean. Our regulars know what a great cocoa this is!

Preparation and General Uses
Pernigotti is ready to satisfy in drinks and desserts, like a rich Chocolate Sorbet or a super dense Brownies. Add Pernigotti cocoa powder and sugar (to taste) to hot milk, and the aroma will transport you to breezy autumn days in the Piazza della Signoria.

Hot Cocoa Recipe
This is a classic hot cocoa recipe - perfect for a rich, unsweetened cocoa powder like Pernigotti Cocoa Powder.
ingredients:
1/2 cup super fine sugar
1/3 cup hot water
1/4 cup Pernigotti Cocoa Powder
4 cups whole milk (or 2 cups milk and 2 cups light cream or half-and-half)
1/8 teaspoons fine sea salt
3/4 teaspoon Heilala vanilla extract
directions:
1. Mix sugar, hot water, cocoa powder and salt together in a saucepan. Stir over medium heat until mixture boils. Cook, stirring constantly, for 1 minute.
2. Remove from heat and stir in milk. Continue to heat -- but do not let mixture boil. Remove from heat and add vanilla. Blend and serve immediately.
Yield: 4 servings

Ordering Information
Please note that the cocoa comes in a "service pack." It is sealed in a thick plastic bag for production baking, and the bag attracts cocoa powder to the exterior during packaging. This is quite normal and will not affect the product.

The Top Cocoa Ever
I first discovered this cocoa at Williams-Sonoma 20 years ago.....and have been using it ever since. Of course, now I buy it in large quantities! It makes a decadent hot chocolate, and I use it in brownies and Martha Stewart's one-bowl chocolate cake recipe.
Really wonderful.....

Best Cocoa on the planet
I have been using this exclusively for years now. I have a 'secret' brownie recipe that I make with this cocoa, syrup made from the cocoa and only the best ingredients. Everyone goes ga-ga over them. Syrup - so easy to make - anything that calls for cocoa I use this. Sometimes I mix just a touch into my coffee from a treat.
If you have not tried this yet you need to. You WILL NOT be disappointed!!!

Great stuff
Bought for truffle-making Christmas 2010. Wow, this is the best! I have always loved Valhrona, but glad I gave this a try. I planned to share/ gift give, as 500 truffles later, I've hardly used any......... Can't say enough great things about it. ....

WOW!
I just received my first order of Pernigotti Cocoa. I have been a fan of Valharona Cocoa for years, but this may have replaced it as my Favorite! It has an incredible taste, I could smell it thru the double bagging. It is just GREAT!
I would highly recommend it and for 2.2 lbs it really is quite a bargain!
