Basic Chocolate Ice Cream Recipe

This is the most basic of ice cream recipes. We have found that Pernigotti cocoa makes a great chocolate ice cream.

Ingredients:
3 egg yolks
1 cup sugar (ideally superfine)
1 1/2 cup whole milk
2 cups cream or milk
1/3 cup Pernigotti Cocoa Powder
1 teaspoon vanilla extract

Directions:
1) In a saucepan, beat milk and egg yolks together.
2) Blend in the sugar
3) Cook over medium heat, stirring constantly until thickened. Enough so to stick the spoon.
4) Remove from the heat and sift in the cocoa slowly
5) Beat until well blended
6) Cool in the refrigerator, about 30 minutes
7) Add additional milk or cream and vanilla. Mix well and freeze or add to ice cream maker.
8) Stir every 5 minutes for the next 20 minutes
9) Freeze overnight or at least 30 minutes before consuming it all!


2. Gradually add whipping cream, light cream and vanilla to mixture, beating with whisk until well blended. Refrigerate until cold - at least 2-4 hours. Place cooled mixture in ice cream freezer container. Freeze according to ice cream makers manufacturer's instructions.
