2 cups Mochiko Sweet Rice Flour
2/3 cup Caputo "00" Chef's Flour
1 cup India Tree Dark Muscovado Sugar
1 Tablespoon baking powder
1 cup Ayam Coconut Milk
1) Sift flours, brown sugar, and baking powder into a large bowl. 2) Add coconut milk, mix just until blended. 3) Add enough water to give your batter a ribbon-like consistency. 4) Steam cakes over boiling water at high heat for approx. 20 to 30 mins. Important- Do not lift the lid for at least the first 15 minutes or you will not get the split or smile on top! Cakes will be golden brown and fluffy when done. Remove from steamer and place on wire rack to cool. These cakes are best eaten the same day.
