Bomba XXX Pimenton Deviled Eggs

Ingredients

8 large eggs 

1/3 cup mayonnaise 

1 1/2 tablespoons dijon mustard 

1 teaspoon Katz apple cider vinegar or white-wine vinegar 

2 teaspoons Bomba! XXX (or ketchup)

1 teaspoon Pimenton de La Vera (or Sweet Smoked Paprika) 

A pan to make hard boiled eggs, your favorite fork, a sharp knife. Ideally a food processor or muscles.

Makes 8 eggs     (hard boiled egg recipes here)

Trading in classic tomato paste, mustard, paprika & white wine vinegar with Bomba XXX, XXXX Kozliks Mustard, Pimenton De La Vera, & Katz Apple Cider Vinegar makes it better. 


directions:

#1: Make 8 hard boil eggs. Cool completely with ice water.  Peel eggs. Cut eggs in half lengthwise and place yolks in a bowl or processor.

#2: Add mayonnaise, mustard, Gravenstein apple cider vinegar to the bowl and mash with fork to mix. Pass thru a sieve to make smooth. OR process in food processor. (the fork is more rustic)

#3: Add Bomba XXX and Pimenton and mix in.

#4: Use a pastry bag with a star tip or a zip lock plastic bag with one corner cut open. Pipe yolk mixture into the egg white halves. Or uses two spoons.

#5: Garnish if you wish and Eat!
