Khajur Burfi - Indian Date and Nut Roll Recipe

Ingredients

15 Medjool dates - about 290 to 300 grams

2 tablespoons ghee

3/4 cups of mixed nuts - slivered almonds, red walnuts roughly chopped, pistachios, or any nuts

1/4 teaspoon ground cardamom

1 tablespoon white poppy seeds

1. In a food processor, pulse the pitted dates into a coarse paste.

2. In a medium pan heat 1 tablespoon of ghee and all the nuts.

3. Toast your nuts until they become golden brown and before they burst or burn. Move the nuts to a bowl too cool.

4. Take the pan and add the remaining ghee and the cardamom powder and mix to combine

5. Add the dates to the pan and allow the dates to soften from the heat

6. Add the nuts and fold them into the date mix

7. Transfer everything onto a sheet of parchment paper. 

8. Allow to cool and then roll into a 6 inch log

9. Unwrap the parchment paper and spread the poppy seeds and then roll the log to cover the exterior.

10. Cool in the refrigerator for at least 30 minutes before slicing in 1/4 inch discs

Stores well for a few weeks
