Fish in cans are amazing when it does right. We taste test all of our fish and seafood all the time.
Unlike so many purveyors, we order high-quality seafood in small quantities and receive shipments weekly. Even though we know canned food is the modern world's version of long-term storage, we know most everything is better when it is "fresher."

You have a knack for writing and should consider writing books, and or team up with David Leibovitz (old pastry chef at Chez Panisse…who now lives in Paris)….he has a wonderful news letter also.  I always take my time reading both of your newsletter ( yours and his)  as there is so much care put into them.
