Sweet Potato Soup Recipe

Sweet potatoes (not yams) may have properties that can help combat viruses like shingles. This is an easy way to get those nutrients into your body. Make a potful and reheat small portions every day.

This is so simple, and very little labor is involved in making it. Be sure to cook the onions before you add the sweet potato, and you will have success. Save salting until plating. Then you or your guests can add the amount of salt they want. Maple syrup or balsamic is a nice drizzle addition. Sugar is not good for certain viruses.

Directions:


 1. Bake the sweet potatoes in a 400 degree oven until a fork can pierce easily. Wrap each sweet potato in foil, poking each with a fork. Wrapping allows steam to stay in the potato. About 40 minutes. Yam should be 205F 

2. When the sweet potatoes are almost done melt the butter in a large, heavy-bottom pot. Add chopped onions to the pot and cook over medium heat until the onions are tender - about 10 minutes.

3. Scoop out the sweet potatoes with two spoons or the like from the skin. Add to the onions.

4. Add water, stirring, until the soup is smooth and the consistency you like. May require mashing like mashed potatoes.

5. Simmer until the sweet potatoes have reached a bubbling hot.

5. When done, puree with a stick style blender in the pan for a smooth soup.

Top with an interesting oil like argan, pumpkin, avocado

serves 6-8
