About the Peregion Bean:
The Peregion bean is a small but beautiful heirloom bean from Oregon. Found growing wild in a hedgegrow, the beans are a mix of solid mocha and chocolate swirld beans. Firm with a nutty flavor, Peregion beans are good in soups, baked and just an all around all purpose bean that keeps it's swirled markings when cooked.

Peregion Bean & Winter Squash Posole Stew

Ingredients:
1 cup Peregion Beans
1 cup dry posole (hominy)
1 small onion - sliced thin
2 cloves garlic
1 1/2 teaspoons chile powder
1 1/2 teaspoons whole cumin
3/4 teaspoon Mexican oregano
1 cup chopped tomatoes
1 cup winter squash - peeled and sliced thin
1 tablespoon vegetable demi glace (Concentrated stock) (More Than Gourmet)
2 teaspoons Italian parsley

Directions:
1. Soak bean til skins wrinkle.

2. Drain beans, and cook in 5 cups water for 2-3 hours, til tender.  Add more water if needed.

3. Saute onion, garlic & spices til soft.  Add squash, carrots and tomatoes.  Cook 5 minutees, stirring ocationally.

4. Stir in beans, posole, cooking liquid, and stock concentrate.  Simmer 30 minutes
