The beans used for this chocolate are of the Criollo variety, hailing from 17 degrees 5 minutes South 47 degrees 20 minute East, which puts the plantation in north central Madagascar just west of the city of Taomasina. It has a cocoa-mass content of 75% with a touch of soy lecithin for smoothness. It has what has been described as a "fresh" nose, fruity and slightly minty. It has a most delicate flavor that causes the palate to explore its complexity - bitterness preceding sweetness leading to a fine acidity and echoes of the opening bitterness on the finish.

This is one of our favorite bittersweet couvertures for truffles, pouring ganache, and flourless chocolate cake.

Bittersweet couverture from one of France's three remaining bean-to-bar chocolate makers. Francois Pralus is a true chocolate aficionado. He is able to discern the best beans, and the best characteristics of each type of bean the As one does with wine, he can talk about chocolate's vintage and origin characteristics - the powerful and heady nose, aromas of burnt butter and liquorice of the Venezuela Trinitario bean chocolate, and the fresh nose, and slightly minty and fruity flavor of the Madagascar Criollo bean chocolate. The hard work, ingenuity, and palate of François Pralus have been rewarded with the most prestigious National and International awards.
