Mehdi's piment fort - hot red chile pepper - is produced from little red chili peppers grown on the lush valleys at the foot of the High Atlas Mountains to the northeast of Marrakech. Although a native of the New World, chilies are now essential to Moroccan cuisine. When fresh, these tiny red hot chillies are ground to produce Morocco's most famous condiment, harissa, and when they are dried they are ground into piment fort, and indispensable ingredient for soups, tagines, roasts and spice blends.
