Pan Fried Yams or Carrots Recipe

Nothing could be simpler, or a better way to get your carotenoids (Vitamin A), than by eating Yams or Carrots. And nothing could be easier to make, or more delicious or sweet, than making your yams or carrots this way.
ingredients:
1/3 pound carrots (Use adult carrots ,not baby carrots) or 1 medium-sized yam - peeled and diced evenly
Rice Bran Oil for sauteing
Unstalted Butter for sauteing
Olive Oil for finishing
Fresh Italian (flat-leaf) parsley - chopped
Sea Salt and Tellicherry Black Pepper to taste
Directions:
1. Dice Yam (or carrots) into 1/4 to 1/3 inch cubes. It's important to make the cubes consistent, so that all the cubes cook at the same rate.
2. Put 1 tablespoon Rice Bran Oil and one tablespoon butter in a saute pan, and heat on medium heat.
3. Add cubes of carrots (or yams) and saute, stirring continually until all serfices are golden brown and well caramelized, and the yams or carrots are soft - but not TOO soft.
4. Finish with a drizzle of olive oil, a sprinkle of sea salt and black pepper, and a sprinkly of chopped parsley and serve warm
