Oven Roasted Vegetable Casserole Recipe

Ingredients

1 zucchini, diced in 1/2 inch pieces

1 large onion, diced 

2 red bell peppers cut into strips

2 carrots, chopped

1 eggplant cut into half inch dices

1/2 cup extra-virgin olive oil

Salt and pepper

1 bunch parsley chopped

5 basil leaves

1 sprig thyme, stemmed and minced

1 sprig oregano, minced

3 bay leaves

Oven Roasted Vegetable Casserole Recipe


1. Preheat the oven to 300° F

2. In a large bowl toss all the vegetables with olive oil

3. Salt and pepper around the edges and then toss again

4. Add herbs and toss

5. Spread out in a large roasting pan

6. Roast for 1 hour

remove the bay leaves and serve with bread or a flatbread
