Patrick Bartoli's gold medal-winning La Maison de l'Huile d'Olive ("House of Olive Oil") is located near the town of Olmeto on Corsica's southwest coast. Here on his estate, Patrick grows the Zinzala variety of olive - a local Corsican variety - and produces an amazing cold-pressed extra-virgin olive oil.
A mild climate allows a late harvest of mature olives which give this olive oil a fruity and mild taste, reflected in its name: "Fruitée Douce". One of the most fragrant oils we've ever experienced, it is characterized by freshness and fully developed herbal aromas of rosemary and "maquis" - a dense, fragrant underbrush of oak, juniper, thorn, heather, and wild herbs and flowers that covers much of the island. Patrick Bartoli's Zinzala olives produce an oil of unbelievable fruitiness that words cannot fully express. It is smooth, silky and buttery with undertones of walnuts, hazelnuts, and cacao.
This oil has earned the famous French olive oil A.O.C. label - certification for quality, origin, low acidity and strict mode of fabrication. It is pressed mechanically in a modern mill designed to respect a 100% natural oil making tradition.
This extra-virgin Corsican olive oil will add delicious flavors to grilled fish and meat, salads, cooked vegetables and pasta or can be simply enjoyed with bread and cheese. It would also be perfect for creating an arugula pesto or even a parsley pesto.
