Chimichurri is a red sauce used as a condiment for cooked meats, or as a marinade for grilled meats. A mainstay in most of Argentina's kitchens. It's etymology is under much debate. Some say that it is a local verbal corruption of "Jimmy McCurry", and Irishman who helped Argentina gain it's independence. Another theory is that it is a local corruption of the words, "give me the curry." I guess, in the end, it really does not matter. What matters is that it is really delicious -- and a great way to eat meat.
Traditionally made from parsley, garlic, olive oil, vinegar, red pepper flakes, and a mix of other seasonings, including: paprika, oregano, cumin, thyme, cilantro, lemon and bay leaf. Not hard to make, but hard to perfect.
This one is brought to us by our friends, Anne and Maria -- all the way from Argentina. Nicely balanced. Not too hot. Not to vinegary. Not to herbaceous. Just perfect.

New cook
My husband bought this sauce @ your Holiday Open House. He has just started cooking & made the chicken breast wrapped in puff pastry (the pastry was slathered with a mix of 2 T of Chimichurri sauce & 4 oz of cream cheese/divided between 4 breast). It was easy & fabulous. We will make it again & this time we will serve it to dinner guest. The Product Rep @ your open house gave us the recipe. Yummy...Thank you
