Black Cod with Orange Slices Recipe
So simple -- but so good. But the quality of the fish is so important. Black Cod is expensive - although living in the Pacific Northwest has its advantages.
ingredients:
2 sides of black cod - filleted - approx 3.5 pounds
2 oranges, sliced into round disks
juice of 1 meyer lemon
olive oil
sea salt and black pepper to taste
directions:
1. Preheat oven to 400 degrees (F)
2. Coat both sides of black cod fillets with olive oil, and lightly salt and pepper.
3. Place fillets into a oven-viable roasting pan skin side down, and cover with orange slices and lemon juice.
4. Place in pre-heated oven uncovered until done - when the flesh starts to separate. About 10-15 minutes.
