Egg Scramble with Ramps Recipe

A traditional recipe for Ramps. Adapted from

1-2 pounds of ramps (wild leeks)
6 large eggs - beaten
sea salt and freshly ground pepper to taste
cooking oil or pig lard

1. Parboil ramps for about 10 minutes. Drain well.

2. Heat cooking oil/lard over medium heat in a heavy skillet. Add drained ramps. Add beaten eggs and stir constantly until eggs are well cooked. Serve immediately.

Serves: 6-8
