Farro Spezzato (Cracked Farro) Pilaf Recipe

Farro Spezzato is so quick and easy to make. Farro pilaf makes a wonderful whole grain side to meat or chicken dishes. Mush healthier than white rice or couscous. You can use farro spezzato in almost any recipes that calls for bulgar wheat, although, Etruria's Farro Spezzato is small, so it cooks even faster than bulgar.

1 cup Farro Spezzato
3-1/2 cups chicken stock
4-5 green onions (or wild ramps) - sliced thin
2 cloves hard-neck garlic - minced
rice bran oil for cooking
sea salt and pepper to taste
Lemon Olive Oil to finish

1. place large skillet with 2-3 tablespoons of rice bran oil and heat.

2. saute onions and garlic together, being careful not to burn them. Add farro, and saute until all the oil is absorbed. Be careful not to burn the farro.

3. Carefully add the chicken stock, and stir until farro is evenly mixed with the stock. Cover and simmer on low for 5 minutes, until all the liquid is absorbed.

4. Fluff with a spoon and add sea salt and pepper to taste. Serve immediately, with a drizzle of lemon olive oil.
