Classic Dark Chocolate Sauce Recipe
Ingredients:
1 cup (250ml) water
1/2 cup (80g) sugar - superfine-caster
1/2 cup (160g) Steen's pure cane sugar syrup
3/4 cup (75g) ChefShop Grande Brut cocoa powder
2 ounces (55g) chocolate feves or discs like Cru Sauvage
pinch of sea salt
Optional:
Vanilla or Almond extract 1 teaspoon -
Directions:
1. In a warmed double boiler, whisk together the water and sugar - a saucepan works as well - keep the temperature medium or lower
2. Whisk in the cocoa powder.
3. Whisk in the pure cane syrup
4. Continue whisking to visibly fully incorporate the cocoa powder
5. Add the chocolate and sea salt, whisk and remove from the heat. The chocolate will melt very quickly.
6. Continue to whisk after removing from the heat ensure it is full melded together.
