Emmer flour, also known as Farro, is an ancient wheat flour that makes great scones, biscuits, waffles, and other baked goods. Emmer is one of the oldest cultivated grains to have survived to modern times. Rich in fiber and calcium, this flour is stone-ground and perfect for making fresh pasta or biscotti. It is a harder grain than "regular" soft wheat, which makes it a perfect substitute for typical whole wheat flour.

Organic farro flour is also a good alternative for low gluten baking.
