Super Guacamole Recipe
One day Jess wanted to make guacamole -- but was missing one key ingredient - Tomatoes. So he improvised. And we are glad he did. He used Mama Lil's peppers instead. It was so easy -- and no need to run to the grocery store. Just open a jar of mama lil's instead. Simple and quick. Best way to use up very ripe avocados.
1 ripe Reed or 3 ripe Hass avocados, pitted, peeled and mashed with a fork
¼ cup finely minced onion
1 clove hard-neck (or soft-neck) garlic - minced
1 tablespoon fresh lime juice, or to taste
1/2 teaspoons sea salt, or to taste
1 heaping tablespoon of Mama Lil's pepper, diced
Mash avocado meat in the skin - and then transfer mashed avocado to a bowl. Add everything but the peppers, and stir to combine. Add peppers and lightly chill again.
Serve with really good chips
Makes 2-3 cups - depending on the size of the avocado
