Smooth and with only a hint of vinegar, this is a sweet tasting white verjus made with semolina. Because it's not fermented and thus nonalcoholic, it doesn't compete with wine served with a meal. Perfection when used in a salad dressing (3 parts verjus to 1 part oil), the white is perfect with light greens. When using with chicken or a nice white fish, the verjus does wonders to enhance the flavors without overpowering the dish.

It is a fun, versatile ingredient that can make a salad dressing or deglaze a pan, yet it is simple enough and gentle enough to drink with a little sparkling water on ice.

Verjus is enjoyable and versatile. Like vinegar and wine, you can?t have to many varieties, and you can always have a favorite ... this one is mine.

Store in the refrigerator, perhaps up to two to three months.
