Pastrami is a seasoned beef made from a cut of the plate, brisket or round. After the fat is trimmed, the meat's surface is rubbed with salt and a seasoning paste that can include garlic, ground peppercorns, cinnamon, red pepper, cloves, allspice and coriander seeds. The meat is cured, smoked and cooked. New York style pastrami is most often done with the plate or brisket, and usually has loads of inter-muscular fat - great for flavor but not the healthiest for you.

Our pastrami is made by Rick at A&J Meats. He takes naturally raised choice top round, cures it with mostly pepper, and then smokes it over an applewood fire for 12 hours.

The result is some of the leanest and most flavorful pastrami we've ever tasted. Already cooked, it can do double duty when you thinly slice it, both as a cold cut and in a heated pastrami sandwich with all the traditional trimmings - don't forget the rye bread.

The pastrami comes in a whole piece that weighs approximately 4.5 to 5 pounds and will be the hit of any party.
