The marshy flats of the Camargue region on Provence's Mediterranean coast has had a seesaw history, being a place of modest agriculture and livestock raising during one period and a malaria-infested marshland in the next; it was always dependent on the amount of money and labor that the local populace chose to expend that determined which of the two were the case.
Today it is place that is actively farmed with orchards, pastures and rice paddies dotting the area. One vital activity has continued here since ancient times, the collection of sea salt. Not nearly as large as the production off France's Brittany coast, Camargue sea salt production has always been important to the inhabitants of the South of France who obviously think it is better.
Several grades of salt are produced, the finest being their version of Fleur de Sel. The paludiers, "salt rakers," must pay attention to the weather conditions all summer long if they are to catch the ephemeral white gold dust on those days when the sun and the wind coax it to the water's surface. They must act quickly or the opportunity is lost. The payoff is tiny, white crystals that have a delicate balance of numerous salts, minerals, and micronutrients, truly the finest salt available.
