Fennel Pollen Roasted Chicken Recipe

This is a perennial favorite in our house -- always the first choice.

Ingredients:
2 chicken breasts - skin on, bone in
1/4 cup olive oil
1 teaspoon sea salt
1 teaspoon fresh ground black pepper
1-1/2 teaspoons wild fennel pollen


Directions:
1. Preheat oven to 350-degrees (F)

2. Wash chicken under cold, running water. Pat dry. Separate skin from meat by sliding hand under skin for a crispier skin.

3. Brush chicken liberally with olive oil. Mix together salt and pepper and sprinkle over chicken breasts liberally - skin side only. Then sprinkle chicken with fennel pollen - skin side only.

4. Bake chicken breasts in small roasting pan in oven until done - about 25 to 35 minutes.
