Farro Spezzato (triticum dicoccon) from Organic Farming
This cracked emmer is quick and easy to cook. Unlike the full size emmer (before it has been "crushed") it cooks in ten minutes or less. (your results will vary)

Similar in size to Bulgar Wheat this emmer needs no pre-soaking. Easy to use. Some add it to soups or envision as a base to a nice chicken dish or rack of lamb. Try it simply cooked in a hot pan with olive oil and onions, garlic and mushrooms.
