These medium-size ivory kidney beans are popular in Italy where they are used in antipasti, soups, and pasta. Nutty, smooth, and creamy, cannellini readily take up the flavor of strong herbs, and so they are excellent all-purpose beans.

Try them in warm dishes like Pasta e Fagioli, or take advantage of their texture by pureeing them instead of chickpeas for a smooth creamy homemade hummus.
